Evaporated Milk
Evaporated milk is a dairy product made by removing about 60% of the water from fresh milk. It is a concentrated form of milk, but unlike sweetened condensed milk, it does not contain added sugar.
Main characteristics:
- Texture and color: Thicker than regular milk, with a slightly darker (cream) color due to the heating process;
- Production process: The milk is heated to remove water and sterilized, which allows it to have a long shelf life without refrigeration until opened.
Common uses:
- In cooking and baking to add creaminess to recipes;
- As a substitute for cream or fresh milk in some preparations;
- In beverages like tea and coffee (e.g., in many Asian and Caribbean recipes).
Because it is concentrated, evaporated milk can be reconstituted with water to achieve a consistency similar to regular milk.
