Salt is added and thoroughly mixed, an agent is introduced to help trigger natural coagulation. Just before filling, a coagulant is added to start the curdling process.

Instead of forming curds in open vats, the still-liquid mixture is aseptically filled into pre-sterilized carton packs under hygienic conditions. The cartons are then hermetically sealed, allowing the cheese to begin solidifying directly inside the closed package within 20 to 30 minutes - a technical solution used by IPI’s that enables in-pack coagulation of white cheese.

As the curds form, any liquid whey released remains inside the carton, naturally creating the brine that preserves the cheese’s texture and moisture. The sealed cartons are stored at controlled temperatures to allow full setting and are moved to cold storage after 24 hours. The cheese is ready to be consumed just one week after production.

This in-pack coagulation process reduces handling, prevents contamination, and ensures consistent product quality - all while supporting shelf-stable distribution and simplified logistics.

Compared to conventional techniques - such as packing feta in tins or tubs filled with brine - aseptic carton packaging offers clear advantages. There is no need for a continuous cold chain to prevent spoilage. Moreover, the in-carton setting process significantly reduces product handling: by eliminating steps such as open-air curd transfer, cutting, and repackaging, producers minimize contact points and greatly reduce exposure to potential pathogens.

Versatile formats and retail display options

The most commonly used carton sizes for white cheese in aseptic packaging are 125 ml, 250 ml and 500 ml (rarely some 1000 ml formats can also be found). Depending on the package format and marketing approach, white cheese products can be found on store shelves in different orientations - either in the classic upright position or laid flat with the long side resting on the shelf. This versatility allows for greater flexibility in display and optimizes retail shelf space.
